This easy baked tofu comes together in under an hour in a delicious soy sauce mixture. It is perfect for meal prep and goes great with rice, salad or stuffed into tacos!

Ingredients
- ¼ cups Mirin
- ¼ cups rice vinegar
- ⅓ cups Soya sauce
- 2 tablespoons Sesame oil
- 1 block (about 12 oz. size) Tofu, cubed
Preparation
Whisk mirin, rice vinegar, soy sauce and sesame oil in a shallow dish. Add the tofu and marinate for 30 minutes.
Preheat oven to 425ºF and transfer tofu to a baking sheet lined with silpat or parchment paper. Reserve the marinade.
Bake the tofu for 15 minutes until slightly crispy around the edges.
Meanwhile, simmer the marinade in a small saucepan until it reduces by about a third. Serve as desired (see notes).
Remarks:
• I love it for meal prep and make two or three blocks of tofu at a time to use throughout the week.
• It is excellent on bowls of rice, on a vegetable curry or in salads!
• The reduced marinade is delicious in salads dressing or drizzled with baked tofu and rice.
