These wonderful shortbread crust bars are simply the best. They are perfect for that holiday party or to wrap and give as gifts.
- 2 cups All purpose flour
- 1 cup Sugar
- ½ teaspoon Baking soda
- ½ teaspoon Salt
- ¾ cups Softened butter
- 1 cup Finely chopped pecans
- 10 ounces, weight Canned apricots
In a medium mixing bowl, combine the flour, sugar, baking soda and salt. Mix well then incorporate the butter with a fork and continue to mix until the mixture is crumbly. Add the pecans and stir well.
Press half the mixture into a 13×9-inch baking dish. Be sure to press down firmly and make an even coat. Bake at 350ºF for 15 minutes.
Spread the preserves over the crust to make a nice even layer and cover with the remaining crust. Return to oven to cook for 30 minutes. Cool on a wire rack then cut into bars.
