A zesty twist on this classic side dish that’s sure to add a splash of color and flavor to your table! Accompanied by an apple for more crunch, this simmered accompaniment will accompany many dishes, in particular a good roast chicken.

Preparation: 15 minutes

Ingredients

  • 85 grams Red cabbage, shredded
  • 35 grams Onion
  • 60 grams Green apple
  • 1 teaspoon Balsamic vinegar
  • 10 grams brown sugar

Preparation

Remove the core and outer leaves from the cabbage. Thinly slice. Use a mandolin if you have one – I used a 3mm setting for speed and consistency.

Mince the onion. Peel, core and cut the apple into small pieces.

Place all fruits and vegetables in a large saucepan. Add balsamic and sugar. Turn on the heat and, stirring often, bring the contents to a light steam. Reduce the heat to low and cover the pan. Leave to cook and infuse for 1h30.

Serve immediately or store in the fridge for up to 3 days. Enjoy!
