A beautiful reimagining of the classic Italian salad, this Balsamic Peach Caprese is ridiculously fresh, healthy, and flavorful. Sweet peaches, basil and balsamic glaze are the perfect accompaniment to mozzarella and delicate tomatoes.
- 1 whole Ball (about 8 oz) Mozzarella, cut into 8 slices
- 8 sheets Basil
- 1 whole peach slices
- 6 set Cherry tomatoes, halved
- 1 tbsp Balsamic glaze
- Olive oil and freshly ground black pepper, to serve
Wash and prepare ingredients as described.
To assemble, layer the mozzarella and basil in a circle on the plate, overlapping the mozzarella slices and basil leaves. Garnish the dish with peach slices and cherry tomato halves.
Drizzle with balsamic glaze and olive oil. Grind some fresh pepper on top and enjoy!
