If you like beet salad at the restaurant, it’s time you learned how to make it yourself at home! It’s easy and cheap and full of flavor. Use your Instant Pot to make it even easier!

Ingredients

  • 5 whole beets
  • 1 bag (approx. 5 oz. size) Baby Mixed Green Salad
  • 4 ounces, weight Goat cheese
  • ½ cups candied nuts
  • FOR SCREWING:
  • ½ cups Balsamic vinegar
  • ½ cups Orange juice
  • 1 tbsp Dijon Mustard
  • 1 teaspoon granulated garlic

Preparation

Brush and trim the beets. In an Instant Pot, place 1 cup of water in the pot. Then place the trivet and the beets on top. Pressure cook on high for 15 minutes for small beets and up to 30 minutes for large beets.

Release the pressure manually. Prick the beets with a fork, remove the beets and easily pierce them. Pressure cook the remaining beets for an additional 5 minutes. Let cool. Peel and slice.

Meanwhile, in a small saucepan, add all the ingredients for the dressing and mix well. Simmer until slightly thickened. Remove from heat and let cool.

In plates or bowls, add lettuce, sliced ​​beets, crumbled goat cheese and walnuts. Spoon dressing over and serve.
