Black bean salsa with pineapple and jalapeno is the perfect partner for your next Mexican dish! Fresh, healthy and full of flavor. Easy to prepare: 10 minutes of preparation time and 30 minutes for the flavors to blend, and you’re done! Enjoy!
- 1 box (size 15 oz) black beans, drained and rinsed
- 1 Jalapeño
- ½ cups Diced pineapples
- 1 tbsp Fresh squeezed lime juice
- ¼ cups Sweet red bell pepper, diced
- ¼ teaspoons Salt
- ⅛ teaspoons Pepper
Drain well and rinse the black beans. In a bowl, add all the remaining ingredients as well as the drained and rinsed black beans. Mix and refrigerate at least 30 minutes before serving to allow flavors to blend.
Note: I didn’t add onions to my recipe because our family doesn’t like onions. But I think it would be nice if you added about 1/4 cup diced red onion.
