Ingredients
- 2 cups Oatmeal
- 1 teaspoon baking powder
- ½ teaspoon Cinnamon
- Pinch of salt
- 2 Eggs
- ¼ cups Maple syrup
- ½ cups Nut milk
- 1 teaspoon Vanilla
- 2 tablespoons Melted coconut oil
- 1 cup Blueberries (I used frozen)
Preparation
Preheat the oven to 350ºF. Spray a 9×9-inch baking dish with cooking spray (or line with parchment paper) and set aside.
In a large bowl, combine the dry ingredients: rolled oats, baking powder, cinnamon and salt.
In a smaller bowl, whisk together the wet ingredients: eggs, maple syrup, nut milk, vanilla and coconut oil. Pour the wet ingredients into the dry ones and mix well. Stir in blueberries.
Pour the mixture into the prepared baking dish. Bake for 35 to 40 minutes, until the top is golden brown and the oats are set.
Serve warm or at room temperature. Serve as is or topped with nut butter, yogurt or maple syrup.
