Ingredients
- 1-½ cup Sweet potatoes
- 1 tbsp extra virgin olive oil
- 4 slices Bacon, diced
- ⅓ cups chopped onion
- 2 cloves cut garlic
- 1 cup Chopped green pepper
- 1 cup Chopped red pepper
- 1 cup Ground beef
- ¼ teaspoons Salt
- ¼ teaspoons Black pepper
- 2 teaspoons Herbs of Provence
- 8 whole Eggs
Preparation
Preheat the oven to 350ºF (180ºC).
Dice the sweet potato and place in a 12 x 7 1/3 inch (30.5 x 19 cm) glass baking dish with a tablespoon of extra virgin olive oil. Bake at 350ºF (180ºC) for about 30 minutes.
Brown the bacon in a large sauté pan over medium-high heat for about 5 minutes. Add onion and garlic, and stir. Add green and red peppers and stir.
Add the minced meat, stir and break the meat into small pieces. Add salt, pepper and Provencal herbs. Continue cooking for about 10 minutes, stirring occasionally, until the meat is cooked.
In a medium sized bowl, whisk the eggs.
Once the sweet potatoes are tender, add the meat mixture and beaten eggs. Mix well. Spread the mixture evenly in the baking dish and bake for about 15 to 20 minutes.
