Healthy and vegan broccoli soup, full of antioxidants, vitamins and minerals.
- 1 Onion, chopped
- 2 cloves cut garlic
- 1-½ cup Water
- 2 cups Broccoli
- ¼ cups Lenses
- 3 tablespoons coconut cream
- Salt and pepper to taste
- Coriander leaves, to garnish
In a saucepan, sauté the onion and garlic until translucent.
In a saucepan, boil the water. Once the water is boiling, add the broccoli and lentils and cook for about 20 minutes until the lentils are ready (soft). Once the lentils and broccoli are ready, add the onion and garlic to the same pan, along with the coconut cream, salt and pepper.
Mix everything until creamy. To serve, I recommend adding cilantro leaves over the soup. Enjoy!
