Chickpea Breakfast “Egg” Sandwiches

Delicious, hearty, cheesy and so close to reality you won’t believe it. Made in about 30 minutes or less.

Ingredients

  • ½ cups Chick pea flour
  • 1 cup Water
  • ½ teaspoon Salt
  • ½ teaspoon Pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons Vegan Butter
  • 2 slices vegan cheese
  • 2 Bagels
  • Vegan mayo, tomato slices and red onion, for sandwiches

Preparation

In a small bowl, add the chickpea flour and 1/2 cup of water. Whisk into a smooth paste. Add the remaining 1/2 cup of water and whisk until the batter is runny. Add seasonings and whisk one last time.

Heat 1 tablespoon of butter over medium heat in a cast iron skillet. When hot, add 1/2 cup chickpea paste. Once the edges are golden brown and the top looks cooked through, cut the chickpea crepe into 4 sections.

Place a slice of vegan cheese on one of the sections. Fold each section over each other (3 folds) until each section overlaps. Remove from cast iron skillet and set aside. Add the rest of the butter and repeat with the rest of the chickpea paste.

Build your bagels with mayonnaise, tomato slices and red onion. Enjoy!
