This Cinnamon Apple Pie Baked Oatmeal is loaded with chewy apple chunks and the perfect amount of warming spices. The perfect healthy breakfast for fall!

Ingredients
- 2 cups Oatmeal
- 1 teaspoon baking powder
- 1 teaspoon Cinnamon
- ¼ teaspoons Nutmeg
- ¼ teaspoons Allspice
- Pinch of salt
- 2 Eggs
- ½ cups Applesauce, unsweetened
- ¼ cups Pure maple syrup
- ½ cups Nut milk
- 1 Large apple, cubed
Preparation
Preheat the oven to 350ºF. Spray an 8×8-inch baking dish with cooking spray (or line with parchment paper) and set aside.
In a large bowl, combine the dry ingredients: rolled oats, baking powder, cinnamon, nutmeg, allspice and salt.
In a smaller bowl, whisk together the wet ingredients: eggs, applesauce, maple syrup and milk. Pour the wet ingredients into the dry ones and mix well. Stir in the chopped apple, reserving a few pieces to sprinkle on top if desired.
Pour the mixture into the prepared baking dish. Sprinkle the remaining apple on top (if using) and bake for 35-40 minutes, until the top is golden brown and the oats are set.
Serve warm or at room temperature. Serve as is or topped with nut butter, yogurt or maple syrup.
