A super refreshing drink that uses fresh limes and coconut milk. The creamy and unctuous acidity is extremely inviting.

Ingredients
- 5 cups Cold water
- 1 cup Sugar
- 5 whole Quartered limes
- ½ cups Sweetened condensed milk (more or less depending on your sweetness)
- 14 ounces, liquid Whole coconut milk
- Shaved ice, for serving (about 1 cup for each serving)
Preparation
Add water to a saucepan, along with the sugar. Cook over medium heat, stirring, and once warmed, remove from heat. Stir until the sugar is dissolved. Pour into a container and place in the freezer for about 20 minutes.
Add limes to a blender. Pulse to put some rock-and-roll emphasis on those limes. After a few pulses, add chilled sugar water. Pulse a little more, until the limes are slightly crushed, about 10 pulses or so.
Strain the mixture over a pitcher or bowl, pressing down on the lime mixture. The goal here is to remove all the pulp.
Discard the pulp. Add the sweetened condensed milk and coconut milk to the pitcher. Stir well to incorporate everything. Serve over a good glass of crushed ice and enjoy.
I’ll be honest, the drink is a bit surprising because at first you might think it’s horchata, or something similar. But then you jump in and you’re still thinking, what is this? What amazing flavors just hit me on this hot, humid day? Then you start getting it. That light, sweet layer of milk in your mouth is perfectly balanced by that ever-so-light citrus bitterness and acidity. You find yourself drinking more, repeating the above. Then your drink is gone and you want more.
Yes, it’s damn delicious, refreshing and almost a perfect summer drink. I suspect alcohol could easily slip into this one for a high cocktail. Enjoy!
