Flaxseed Oatmeal is an easy low carb meal to start the day.

Preparation: 10 minutes

Cook: 5 minutes

Ingredients

  • ¼ cups Nuts, your choice
  • ¼ cups Flaxseed flour
  • 1 cup Milk, dairy or non-dairy
  • 1 tbsp Cinnamon
  • 2 tablespoons Softer or as desired, more or less to taste

Preparation

Measure walnuts and flaxseed meal (or whole flaxseed) and add to a blender or food processor. Spin about 30 seconds until a coarse meal or flour is reached.

Add the flaxseed flour base to a saucepan. Add the milk, cinnamon and sweetener of your choice and simmer over low heat for 3-5 minutes. This will cook and thicken quickly! Don’t walk away.

Adjust the consistency as needed to suit your taste. I use 3/4 cup milk, but add more liquid to achieve the consistency you desire. You can also use water instead of milk!

Microwave option: follow step one, but instead of adding it to a saucepan, add the ground nut and seed mixture and all other ingredients to a bowl. Microwave for 1 minute. Stir and add liquid as needed, microwave in 30 second increments until desired consistency is reached.
