Guymag is an easy and healthy pudding/halva recipe from Azerbaijan. Perfect for a winter breakfast.
- 40 grams Butter without salt
- 50 grams Whole wheat flour
- ⅛ teaspoons Sea salt
- 500 milliliters Water
- ¼ teaspoons Ground cinnamon
- Organic brown sugar, date palm jaggery, chopped seedless dates or sumac powder, for serving (optional)
In a nonstick skillet, melt the butter and add the flour. Mix well and constantly until the flour has absorbed all the butter. Add sea salt. Over low heat, stir frequently and cook until nutty in flavor and lightly browned.
In a separate saucepan, bring the water to a boil.
Once the butter-flour mixture is cooked, gradually pour in the boiling water, stirring constantly to avoid lumps. The halva will look like a thick brown soup at this point. Don’t worry !
Put the halva on low heat and cook, stirring frequently to avoid lumps. Let the halva simmer until it has reduced by half and you can see traces of the butter separating from the pudding. Add the cinnamon and mix well before removing from the heat.
Divide between bowls. If desired, garnish with sugar, dates or sumac, or drizzle with jaggery. Serve hot.
