This Hot Brown, also known as Kentucky Hot Brown or Louisville Hot Brown, is an open-faced sandwich topped with turkey, crispy bacon, sun-ripened tomatoes, and creamy cheese sauce.

Ingredients
- 2 tablespoons Butter
- 2 tablespoons Flour
- 2 cups Whole milk
- 1 pinch Ground cayenne pepper
- ¼ cups grated cheddar
- ¼ cups Grated Parmesan and more for a sprinkle on top
- Salt and pepper
- 4 slices White bread
- 8 slices Crispy Cooked Bacon
- 1 Large tomato cut into thin slices
- 1 pound Slices of deli smoked turkey
- 1 pinch Paprika
Preparation
Melt the butter in a medium saucepan over medium-low heat. Whisk in flour; whisk continuously for 2-3 minutes. Slowly add milk; whisking continuously. Cook over low heat until thickened; stirring frequently. Whisk in ground cayenne pepper. Reduce the heat and slowly add the cheddar and parmesan. Continue to stir until the cheese is completely melted. Salt and pepper to taste.
Toast some bread, microwave deli meats for 10-15 seconds to get rid of the cold. Assemble the sandwich by dividing the turkey over the four slices of toast. Add several tablespoons of sauce to each sandwich. Garnish with sliced tomatoes and 2 slices of bacon. Divide the remaining sauce between the sandwiches. Sprinkle with a little grated parmesan and a pinch of paprika. Broil for 1-2 minutes or until lightly browned. Be sure to keep an eye out for the sandwiches under the grill as I have always found the chickens unpredictable.
