Instant Pot BBQ Pulled Pork

This easy Instant Pot BBQ Pulled Pork recipe uses a pork shoulder or pork butt roast to make the best slow cooker pork sandwich.

Ingredients

  • 1-½ tbsp brown sugar
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • ½ teaspoon Ground mustard
  • ½ teaspoon onion powder
  • ½ teaspoon Paprika
  • ¼ teaspoons Cayenne pepper
  • ¼ teaspoons garlic powder
  • 2 pounds Boneless Pork Butt Roast
  • 1 tbsp Olive oil
  • ¾ cups Chicken broth
  • ½ tablespoon Worcestershire Sauce
  • ½ teaspoon liquid smoke
  • ½ cups barbecue sauce

Preparation

In a small bowl, combine; brown sugar, salt, pepper, ground mustard, onion powder, paprika, cayenne pepper and garlic powder.

Cut the roast pork into 3-4 equal pieces.

Coat the pork in the dry marinade, then put it in a resealable container or bag. Refrigerate for a few hours or overnight.

When you’re ready to cook, activate the Instant Pot stir-fry function. Heat olive oil in an Instant Pot bowl, then sear pork, turning until browned on all sides.

Remove the pork to a plate, pour in the chicken broth and, using a spoon, scrape the bottom of the bowl to release any stuck-on bits of food. Cancel Skip function.

Stir in Worcestershire sauce and liquid smoke. Then add the fried pork.

Secure the Instant Pot lid and twist the valve to seal. Activate manual mode and cook for 30 minutes.

Once cooked, let the pressure release naturally for 15-20 minutes.

Remove pork from Instant Pot and shred with 2 forks. Stir in your favorite BBQ sauce and/or use the cooking juices.

Serve on buns.
