Instant Pot Chicken and Wild Rice Soup

This Instant Pot Wild Rice Soup is loaded with protein and veggies, and it’s so easy to make. It’s a delicious and comforting dish that’s perfect for meal prep!

Ingredients

  • 1 tbsp Olive oil
  • 1 cup Carrots, diced
  • 1 cup Onion, diced
  • 1 cup Celery, diced
  • 2 cloves minced garlic
  • 1-½ pound Chicken breast, boneless, skinless
  • 1-¼ cup Wild rice
  • 1 teaspoon Thyme, dried
  • ½ teaspoon Marjoram, dried
  • ¼ teaspoons Rosemary, dried
  • 2 whole Bay leaves, dried
  • ½ teaspoon Kosher salt
  • ¼ teaspoons Black pepper, ground
  • 4 cups Chicken broth

Preparation

Set Instant Pot to “Sauté” and add oil. Saute carrots, onion and celery until fragrant. Add the garlic and stir for about 30 seconds.

Add chicken, wild rice and spices. Stir. Add the chicken broth. Close and lock the lid.

Set the dial to “Sealing”. Pressure cook on high for 15 minutes. Use natural release for 10 minutes, then manually ventilate.

Shred chicken breasts outside or inside the Instant Pot as desired. Serve and enjoy.
