Ingredients
- 1 cup Unsalted butter, room temperature
- 1-½ cup Granulated sugar
- 1-½ cup Light brown sugar, packaged
- 4 Large egg whites, room temperature
- ½ cups Creamy Peanut Butter
- 1 tbsp Vanilla extract
- 3-½ cups All purpose flour
- 2 teaspoons Baking soda
- ½ teaspoon Salt
- 24 Reese’s Peanut Butter Cups, coarsely chopped
Preparation
Preheat the oven to 350ºF.
Beat butter and sugars together on medium speed for 3 minutes. Add the egg whites and mix for 1 minute. Add the peanut butter and vanilla and mix for another 1 minute.
Sift the flour, baking soda and salt together in a medium bowl. Slowly add flour mixture to butter mixture on low speed; mix until incorporated. Use a spatula to mix together Reese’s Chopped Peanut Butter Cups.
Use an ice cream scoop to measure out perfect mounds of cookie dough, then place 6 raw cookies on a Silpat or parchment-lined baking sheet. Crush each cookie with your palm, then bake for 11 minutes. Let the cookies rest for 3 minutes before placing them on a baking rack to cool.
