Here’s an easy, tasty and healthy recipe for seared tilapia, topped with a sweet and spicy mango salsa and served on a bed of white rice!

Ingredients
- FOR THE MANGO SALSA:
- 1 whole Ripe mango, peeled and diced
- ⅓ cups Diced red onion
- ⅓ cups Diced red pepper
- ½ Jalapeno, finely chopped
- ⅓ cups Chopped fresh cilantro
- ½ Lime, Juice
- FOR THE TILAPIA:
- 1-½ tbsp Olive oil
- 5 Tilapia fillets
- ½ teaspoon Salt
- Black pepper to taste
- ½ teaspoon Paprika
- TO SERVE:
- 1 cup White rice
Preparation
For the mango salsa:
Add all chopped ingredients to a medium sized bowl. Add lime juice and mix well. Let sit for at least 30 minutes for best flavor.
Make white rice according to package directions. I use about 1 cup of rice for this recipe; you can make more if you want a bigger portion.
For the fish:
Generously spray a large nonstick skillet with cooking oil or use about 2 teaspoons of oil in the bottom of the skillet. Heat over medium high heat.
Place the tilapia on a few layers of paper towels and absorb the extra moisture on both sides of the fillet.
Spray lightly with cooking oil or rub it in manually.
Combine salt, pepper and paprika in a small bowl and lightly rub both sides of each tilapia fillet. Place the tenderloin in the well-heated skillet and cook on each side for 2 to 3 minutes until lightly seared on both sides.
Remove from pan and serve each fillet over a bed of rice. Top generously with mango salsa.
