Ingredients
- 1-½ cup Whole wheat dough
- 1 teaspoon Sea salt, divided
- 1 tbsp extra virgin olive oil
- 3 cups Frozen Mediterranean vegetables
- 2 teaspoons Chopped garlic (fresh or frozen)
- 2 teaspoons Chopped red pepper (chilli), fresh or frozen
- ¾ cups Cherry tomatoes
- 1 tbsp Tomato Paste (Mashed)
- ¾ cups cheddar cheese
- ½ teaspoon Freshly ground black pepper
Preparation
Boil the kettle for pasta, prepare your ingredients and prepare your equipment. Cook pasta in boiling water with ½ teaspoon salt according to package instructions. You’ll want to cook it until al dente, which depending on the shape, is usually around 8-12 minutes.
Meanwhile, heat the oil in a large frying pan then add the Mediterranean vegetables, garlic and chili pepper. Cook, stirring frequently, for 5 minutes. Have you ever been transported to the Mediterranean?
Add the fresh cherry tomatoes and cook for another 3 minutes. This adds another layer of freshness and off-the-beaten-track flavor.
Now add the tomato puree to the skillet along with the cheese, ¼ cup starchy water the pasta is cooking in, remaining salt and pepper. Stir and after about a minute the cheese will have melted and the sauce will have thickened.
Once cooked, drain the pasta and pour it into the Mediterranean vegetable sauce. Toss to coat the pasta with the sauce and serve immediately. Enjoy!
