Ingredients
- FOR THE PEANUT BUTTER BASE:
- 1-½ cup Coconut Flour
- 1 cup Almond powder
- ⅔ cups Liquid sweetener like honey, maple syrup
- 1 cup Pure peanut butter
- ⅓ cups Roasted unsalted peanuts
- FOR THE CHOCOLATE TOPPING:
- 175 grams Semi-sweet dark chocolate
- 3 teaspoons Peanut Butter
- 1 teaspoon coconut oil
Preparation
For the peanut butter base, add the coconut and almond flour, peanut butter, and liquid sweetener of your choice to a large bowl. Stir well with a spatula until the dough begins to form, then use your hands to mix the ingredients evenly.
Use any baking dish or pan you like. We decided to use a silicone muffin pan to form pretty “cups”. Fill each cup, but not completely, leave some space for the chocolate topping. Gently press the paste onto each cup. When done, add 5-6 peanuts on top of each cup, but press them into the batter. Let the mugs chill in the refrigerator for at least 10 minutes.
For the filling, prepare a water bath. Add the filling ingredients to a bowl and set the bowl over a pot of boiling water (double bain-marie) until completely melted. Mix well. Pour the chocolate filling over the peanut butter layer. Refrigerate for at least 1 hour. Store in the refrigerator without eating.
