These Paleo Crispy Smashed Potatoes are as rich in flavor as they are crispy, and are the perfect gluten-free side to add to any Whole 30 meal plan, or just to serve as a side dish at parties!
- 1 package (24 oz size) Organic Fingerling Potatoes
- 1 tbsp Avocado oil
- 2 tablespoons Potato seasoning
- 1 teaspoon Parsley, to garnish (optional)
For the microwave:
Place the potatoes in a damp paper towel. Place the potatoes on a plate and microwave on high power for 5-7 minutes depending on the size of the potatoes. Make sure you can easily pierce the potatoes with a fork to make sure they are cooked through. Let them cool completely before breaking them up.
For the oven:
Preheat the oven to 445ºF. Place the potatoes on a baking sheet and cover with cooking oil. Pierce each of the potatoes for a little extra help with ventilation. Bake for 30 minutes, or until potatoes can be easily pierced with a fork. Let them cool before unmolding them.
Cover a small frying pan in oil and preheat over low heat.
Using a large spatula, smash each potato until flattened but not completely broken. Place the mashed potatoes on the preheated skillet. Season the potatoes with the seasoning of your choice. Cook each potato in the pan on each side for 2 minutes.
Add toppings dressing if desired and enjoy.
