This good, mouth-watering recipe from Peach Bellini has four ingredients and only takes a few minutes of hands-on time. Use fresh or frozen peeled peaches.
- ¼ cups Water
- ¼ cups Sugar
- 3 cups Slices of frozen or fresh peaches
- 1 bottle Chilled prosecco or champagne
Heat water and sugar in microwave on high power for 1 minute or just long enough to dissolve sugar. Let stand and cool for about 15 minutes if using fresh peaches or 5 minutes if using frozen peaches.
Using food processor or blender, pulse peeled peaches over high heat until pureed; adding the sugar/water mixture gradually.
Place 2 heaping tablespoons of peach puree in a champagne flute. Pour the same amount of chilled champagne into the glass. Using a cocktail stirrer, stir just enough to combine.
