Pizza Potato Skins

Think your classic potato skin, but swap the bacon for marinara and pepperoni. The ideas are endless when it comes to pizza potato skins. Stuff them the way you like your pizza!

Preparation: 1 hour

Ingredients

  • 1 whole Russet Potato
  • 2 tablespoons Butter without salt
  • ½ teaspoon Garlic salt
  • ½ cups Your favorite marinara sauce
  • ½ cups Grated mozzarella cheese
  • 6 slices Pepperoni, quartered
  • 1 pinch Chilli flakes (optional)

Preparation

Preheat the grill.

Bake or microwave the potato until tender. Let cool.

Cut the potato in half lengthwise. Place the potato, being careful not to get into the skin.

Add the garlic salt to the melted butter and stir. Brush the inside and outside of the potato skins with the salted butter. Place on a baking sheet and place under the broiler. Keep an eye on the skins as you want them to turn slightly crispy and a deep golden brown. Once this is done, remove from the grill.

Place about 1/4 cup of marinara sauce in each potato skin and use a spoon to smooth the sauce so that it coats the inside. Add 1/4 cup mozzarella cheese to each potato skin, then divide the pepperoni into each potato skin, tucking them in and over the cheese.

Place back under the broiler and cook until the cheese is completely melted, the pepperoni is slightly crispy and these babies look awesome to your liking. It’s time to get excited!

Remove from the oven, sprinkle some chili flakes if desired, plate and get ready to dig in.
