Ingredients
- 2 cups Cooked rice
- 10 whole Mushrooms
- 2 whole Carrot
- 300 grams Chicken breast
- 2 teaspoons Curry powder
- 1 whole purple onion
- 1 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Black pepper
- 3 tablespoons Water
Preparation
Cook the rice. We are not going to explain here in detail how to cook the rice. It’s very simple, rinse the rice, then just add the rice to a pot and double the amount of water. Leave to cook, it is cooked when there is no more water in the pot. Put aside.
While the rice cooks, chop all the vegetables and mushrooms. Cut the chicken into bite-sized pieces.
In a large saucepan, add the olive oil, chopped onions and carrot, and cook until the carrot and onion become translucent. Add spices, curry powder, salt and pepper. Mix well and add sliced mushrooms and water (add a few tablespoons). Cook over low-medium heat for about 4-5 minutes. Then add the chicken and cook for another 4-5 minutes. When almost ready, add the rice and stir until all the ingredients are evenly incorporated. Cook another 2-3 minutes, until all the liquid has dissolved. When done, remove from heat.
Let cool for about 5 minutes before serving. Enjoy!
