There are days when you really want to have a delicious salad filled with vegetables and healthy oils. Greek salad is a delicious way to pack those nutrients.

Preparation: 15 minutes

Ingredients

  • FOR THE CHICKEN SHAWARMA:
  • 1 pound Chicken thighs
  • 3 tablespoons Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • ½ teaspoon Allspice
  • ½ teaspoon Turmeric
  • 1 teaspoon garlic powder
  • ½ teaspoon Salt
  • FOR THE SALAD:
  • 2 cups romaine lettuce, chopped
  • ½ cups Cucumber, sliced
  • ⅛ cups pickled onions
  • ¼ cups Tomatoes
  • 5 whole Kalamata olives
  • 3 whole Marinated artichoke hearts
  • 1 tbsp Feta cheese
  • ¼ cups Mushrooms of Paris

Preparation

Combine all the ingredients for the chicken shawarma and marinate in the refrigerator, covered, for up to 1 day.

Preheat oven to 400ºF. Bake marinated chicken for 20 minutes or until cooked through.

Slice the chicken and serve 1 chicken leg in a bowl with the salad ingredients. Keep the rest of the chicken for your future salads.
