These Quinoa Protein Bowls are so quick, easy, and packed with flavor, you’ll want to put them at the top of your recipe arsenal! Ready in just 30 minutes, they are also versatile: you can change the ingredients according to your desires.

Ingredients

  • 1 tbsp Olive oil
  • 1 Small onion, red or white, diced
  • 1 Pepper, diced
  • 2 cloves Garlic, diced
  • 1 cup Quinoa, uncooked
  • 2 cups Water
  • 1 box (15 oz size) Fire Roasted Tomatoes
  • 2 tablespoons Mexican seasonings
  • 1 box (15 oz size) black beans, drained
  • 1 box (15 oz size) Corn
  • 1 package (8 oz size) Tempeh (or Tofu)

Preparation

Heat the olive oil in a large saucepan over medium heat. Add the onions and sauté for 4 minutes. Add peppers and garlic and sauté for another minute.

Add quinoa, water, fire-roasted tomatoes and Mexican seasonings and cook for 20 minutes over high heat, uncovered. After 20 minutes, check if the quinoa is cooked. If done, add the beans, corn, and tempeh and let heat through for another 5 minutes.

Taste, add desired toppings and serve hot!
