Ingredients
- 5 slices Bacon
- ¼ Large onion, diced
- ½ package (size 10 oz) frozen spinach, thawed and squeezed
- 6 Eggs
- Sea salt, to taste
Preparation
Chop the bacon and put it in a large nonstick skillet over medium-high heat. Cook the bacon for about 10 minutes, then add the onion. Cook until the bacon reaches the desired crispness, about 15 to 20 minutes.
Add the spinach to the skillet and cook until heated through.
Move everything to one side of the pan and crack the eggs into the empty side of the pan. Scramble the eggs, keeping them mostly separate from the spinach-bacon mixture until they start to clump together.
Mix everything together and sprinkle with a few generous pinches of salt. Serve.
