Once you learn how to make these easy and fluffy vegan pancakes, regular egg pancakes will seem so outdated! They are delicious and only require 7 common ingredients!
- 1 cup Vegan milk (any type)
- 2 teaspoons White vinegar
- 1 cup Flour
- 4 tablespoons White sugar
- ½ teaspoon Baking soda
- 1 tbsp Vanilla sugar (1/2 tablespoon vanilla extract)
- 1 pinch Salt
In a small bowl, combine vegan milk and vinegar. Stir, then let stand 5 minutes to thicken.
Meanwhile, in a medium ovenproof bowl, combine the flour, sugar, bicarb, vanilla sugar and salt. Add the milk mixture to the dry ingredients and whisk until the batter is smooth.
On a cast iron skillet over low-medium heat, scoop about 1 ice cream scoop of batter (about 2 tablespoons) per pancake on the skillet. Cook for about 2 minutes on each side, or until golden brown.
