Ingredients
- FOR THE SALAD:
- 2 cups fresh mesclun salad
- 120 grams Prawns (prawns)
- 5 whole Cherry tomatoes
- 3 whole Mini mozzarella balls
- ¼ whole Attorney
- ¼ cups Crushed walnuts
- 1 tbsp Chopped coriander leaves
- 1 tbsp Olive oil (for frying shrimp)
- 2 tablespoons Tamari Sauce
- FOR SCREWING:
- 1 tbsp Lemon juice
- 1 tbsp Flax seed oil
- 1 pinch Black pepper
Preparation
We’re not going to add instructions on how to cook quinoa, we assume you already know that. For this recipe, you will need quinoa cooked at room temperature.
In a large saucepan, add the olive oil, tamari, prawns and about 50ml of water and put over medium heat. Cook for about 3 minutes and add the chopped coriander. Mix well. Cook for another 2 minutes or until all the liquids have dissolved. Remove from heat and reserve.
Prepare the vegetables. In a shallow dish, add all the leafy greens in the first layer. Then add the cherry tomatoes (cut in half), mozzarella and chopped walnuts. Add the cooked shrimp on top and garnish with a few slices of avocado.
Add all dressing ingredients in a small bowl, mix well and pour over the salad.
Serve and enjoy!
