Watermelon, lime and simple syrup make a summer mocktail so good you won’t miss the tequila.

Ingredients
- FOR THE SIMPLE SYRUP:
- 1 cup Sugar
- 1 cup Water
- FOR THE MOCKTAILS:
- 8 cups Seedless Ripe Watermelon Cubes
- ½ cups simple syrup
- ½ cups Fresh lime juice
- Limes, for garnish
- Himalayan pink salt (or kosher or regular sea salt), for the rime glass
- Ice, as needed
Preparation
For the simple syrup:
Combine sugar and water in a saucepan. Heat, stirring occasionally, until the mixture comes to a boil. Simmer for 1 minute, stirring, then remove from heat. The mixture should be clear. Pour into a container and refrigerate several hours until cold.
For non-alcoholic cocktails:
Place the cubed watermelon in a blender. Use the “juice” button or blend for about 45 seconds until the mixture is smooth and frothy on top.
Add 1/2 cup cold simple syrup and fresh lime juice to blender. Blend again for a few seconds.
Pour the salt on a plate. Rub the rims of the glasses with lime juice. Dip glasses in sea salt. Fill the glasses with ice. Pour margarita mixture over ice. Garnish the glasses with a wedge of lime.
Store extra margarita mix in the fridge. Pass through the blender to refresh.
