Simple and easy Zucchini Cheese Breadsticks that are Keto and low carb. A perfect recipe with zucchini.
- 3 cups Grated zucchini
- 1 teaspoon Salt
- 2 Eggs, lightly beaten
- ⅓ cups Flour
- 1 tbsp Melted butter
- ¼ teaspoons garlic powder
- ¼ teaspoons Pepper
- 2 cups Grated mozzarella cheese
- Italian seasoning
In a bowl, sprinkle the grated zucchini with salt. Stir and let sit for 10-15 minutes for the zucchini to start releasing its moisture.
Then place the zucchini in a clean towel and squeeze out all the moisture. This is a very important step! Try to wick away as much moisture as possible. Otherwise, your finished product will not be crispy.
Mix the drained zucchini, eggs and flour. Spray a baking sheet with cooking spray, then spread the zucchini mixture into a large, relatively thin rectangle.
Bake at 450°F for 15-20 minutes or until edges are golden brown. Make sure the top and sides are golden brown so the breadsticks don’t get “mushy”.
Reduce oven temperature to 350°F. Mix melted butter, garlic powder and pepper. Brush crust, then sprinkle with cheese and Italian seasoning.
Bake until cheese is melted, 5-15 minutes.
Allow to cool slightly before cutting into matchsticks.
Serve with marinara sauce, ranch dressing or garlic butter.
